Stuffed Burgers with Arugula and Lemon-Caper Mayonnaise

Zesty relish is mixed into these burgers with a gooey, cheesy surprise in the middle.

Lemon-Caper Mayonnaise:
1/3 cup (75 mL)
2 tbsp (30 mL)
drained rinsed capers, chopped
2 tsp (10 mL)
fresh lemon juice
1 1/2 lb (750 g)
ground beef
egg, beaten
2/3 cup (150 mL)
Nanny Hudson’s Homestyle Relish, divided
1/3 cup (75 mL)
dry bread crumbs
1/4 tsp (1 mL)
each salt and pepper
3 oz (90 g)
Provolone cheese, shredded
burger buns, sliced
1 cup (250 mL)
fresh arugula
slices tomato


  • 1 Lemon Caper Mayonnaise: Whisk together mayonnaise, capers and lemon juice; set aside.
  • 2 Burgers: Preheat grill to medium-high; grease grate well. Mix together beef, egg, half of the relish, bread crumbs, salt and pepper. Divide mixture into 6 portions; roll into balls. Press some Provolone into centre of each ball and enclose with meat. Flatten balls into 1/2-inch (1 cm) thick patties. Grill, with lid down, turning once, for about 10 minutes or until no longer pink inside.
  • 3 Toast buns, cut side down, on grill. Spread mayonnaise over buns; top with arugula and burger patties. Garnish with tomato and remaining relish.
